Creamy zucchinis pasta

  • 1 1/2 pounds zucchinis
  • 1 Tbsp dehydrated shallots
  • 1/2 tsp garlic powder
  • 1 tsp creamy pesto
  • 1/2 pint heavy whipping cream
  • 2 oz grated parmesan
  • 1 pound long pasta
  • salt and pepper
  • olive oil


  • Cut the zucchinis into slices and cook them on low heat in a large pan with olive oil.
  • Add salt and pepper, shallots, and garlic.
    Cover and let cook until zucchini is softened.
  • Add the cream, the pesto, and the parmesan.
    Mix with a hand blender.
  • Cook the pasta, drain and mix with the sauce.
